This Shiraz is Dewey Station Wines flagship wine.
The fruit was sourced predominantly from the premium Ebenezer region with 8% from the southern Altona region. The juice used was 50% of the pressing portion resulting in big tannins. The tannins were softened by aging for 17-months in new French oak and bottle-aged for a further 12-months before release.
The result is a full-bodied wine with big tannins to be enjoyed with a meat dish. Beautiful dark fruits and hints of dried lavender making a perfect wine to match with lamb.
